Slow-Cooked Spoon Roast
beef roast (spoon roast)
mashed & minced
ground black pepper
ground cayenne pepper
Heat oven to 325°. Line a roasting pan with foil.
Put the roast in the pan and rub all over with the olive oil. Combine the garlic and remaining ingredients in a small bowl and rub all over and into the roast.
Roast for 15 minutes, reduce heat to 225°, and continue roasting for about 3 hours longer, or until done as desired. We like it medium rare for the most flavor.
Let the spoon roast rest for 10 minutes before slicing.
